Chinese Walnut Cookies Recipe

Ingredients
1. All purpose flour (2 cups)
2. baking soda (½ tsp)
3. butter, softened ( ½ cup about 1 stick)
4. white sugar ( 2/3 cup)
5. eggs (2)
6. walnut halves or large pieces, toasted, finely chopped ( 1/3 ½ cup)
7. baking powder (1 tsp)
8. salt ( ¼ tsp)
9. vegetable shortening (1/2 cup)
10. brown sugar (1/3 cup)
11. vanilla extract (1 ½ tsp)
12. egg lightly beaten (1 optional)

Method of preparation:-
1. First heat the oven to 325 degrees F. Take a bowl of medium size, mix baking powder, flour, salt and baking soda in it.

2. Take a large bowl, add shortening, butter or margarine, white and brown sugar in it and beat them with an electric mixer. Then add vanilla extract and eggs in it and beat them until they get well blended. Then mix the toasted walnuts in it.

3. Add flour mixture in it and mix it well. Now shape the flour mixture into a log shaped dough. Take plastic wrapper and wrap the cookie dough in it and keep it in the refrigerator for about 4 hours. Now make the small balls of cookie dough about 1 inch in diameter.

4. Place these balls on lightly grease cookie tray about 2 inches apart. Press a walnut half into the center of each cookie. Brush around the walnut with egg wash.

5. Now place the cookie tray in oven and bake the cookies for about 15 to 17 minutes at 325 degrees f until they get golden brown in color. Keep them to cool and then store them in air tight container.

How to toast Walnuts:-
1. Heat the oven to 350 degrees. Take a baking sheet; spread the walnuts halves in it.

2. Place the sheet in oven and bake it for about minutes until they get golden brown. Keep them to cool and then chop them.
