Eight Precious Pudding Chinese Cuisine Recipe

Ingredients
1. Chinese red dates (2 ounces)
2. any candied fruit (1c)
3. maraschino cherry, stem less (1red)
4. oil (3tbsp)
5. sugar (1/4c)
6. glutinous rice (2c)
7. cold water (2c)
8. lotus seeds (1ounce)
9. red bean paste (1c)

Sweet Almond Sauce:-
1. Sugar (3tbsp)
2. water (1c + 2tbsp)
3. almond extract (1tsp)
4. cornstarch (1tbsp)

Method of preparation:-
1. Take a saucepan; add cold water and lotus seeds in it. Keep it to boil. Reduce the heat to low and keep it to simmer for about 20 minutes. Drain it and keep it to cool. Then split it into halves and keep it aside.

2. Take a bowl, put red dates in it. Cover the bowl and steamed it over boiling water for about 30 minutes and then keep it aside.

3. Take a pot, add water and rice in it and keep it to boil. Then keep it to simmer for about 20 minutes. Now add 2 tablespoon of oil and sugar in it. Mix it well and then keep it aside.

4. Take a bowl of medium size, grease it with oil. Place cherry in the center and then place lotus seeds, candied fruits, red dates in circles around the edges of bowl with glaze side down.

5. Now spread the layer of rice mixture over it and then arrange the layer of red bean paste over it. Again spread the layer of rice and then pack it tightly. Now place the bowl on rack in steamer or in pot. And steam it over boiling water for about 1 hour.

6. Take out the pudding from the bowl by running spatula around the edges of bowl and put it in serving plate by inverting the bowl over it.

7. Now prepare the sweet almond sauce by boiling 3 tablespoon of sugar in 1 cup of water. Stir it until the sugar gets dissolve and add almond extract in it.

8. It gets thicken by add 1 tablespoon of cornstarch dissolved in 2 tablespoon of water. Now serve the pudding with this sweet almond sauce.
