Nian Gao Baked Chinese New Year Cake Recipe

Ingredients
1. Mochiko sweet rice flour plus a bit of extra for sprinkling on the baking dish (16 oz. )
2. eggs (3)
3. sugar depending on if you like it sweeter (1 to 1 ¾ cup)
4. butter (1 stick) or vegetable oil (3/4 cup)
5. baking soda (1 tbsp)
6. milk (2 ½ cups)
7. red azuki beans (1 can)

Method of preparation:-
1. Take an electric mixer; mix everything except beans and flour in it. Beat them for about 2 minutes at medium speed. Again beat this mixture for about 2 minutes at high speed to form batter.

2. Take a baking dish of 9*13 inch, oiled or sprayed with pam. Dust the Mochiko flour over it. Spread the half of the batter on the bottom of baking pan and then spread the azuki beans over it. Now spread the rest of the batter over the beans.

3. Place the pan in oven and bake it for about 40 to 50 minutes at 350 degrees. Now take it out from the oven and insert the tooth pick in the center of it. If it comes out clean then the cake is ready to serve.
