Peking Dust Recipe

Ingredients
1. Fresh chestnuts (2pounds)
2. heavy cream (1 1/4c)
3. vanilla extract (a few drops optional)
4. caster sugar (3 1/2tbsp)
5. sugar (1/4c)
6. salt (1/2tsp)

Method of preparation:-
1. Take chestnuts; make cuts on the flat side of each chestnut. Take a pan of boiling water, add chestnuts in it and keep it to simmer for about 40 to 45 minutes.

2. Then drain the chestnuts and keep them aside to cool. Remove the shell and the inner skin of them. Now make the fine powder of chestnuts by grinding them and add sugar and salt in it and then mix it.

3. Now whip the cream into the required thickness and add caster sugar and vanilla extract in it. Make smaller mounds of chestnut mixture and serve it in serving bowls.
