Chocolate Coated Strawberry Fudge Recipe

1. Fresh ripe strawberries (2c)
2. fresh lemon juice (2tbsp)
3. unsalted butter (2tbsp)
4. evaporated skim milk (1can about 12 oz)
5. granulated sugar (3c)
6. Semi-sweet or dark chocolate chips (8oz)
7. cooking spray
Method of preparation:-
1. Take strawberries, wash and drain them and then cut them in thin slices. Take a large saucepan, place it over medium heat, mix butter, sugar and evaporated milk in it and keep it to boil and then slowly add lemon juice and sliced strawberries in it. Cook it over medium heat by stirring it regularly.
2. Take a baking pan of 9*9 or 8*10 inch, spray it with cooking spray. Keep it to cool to room temperature and then place it in the refrigerator for 45 minutes to chill.
3. Take a saucepan, place it over low heat. Melt chocolate in it until it gets smooth. Then put it in a small bowl. Take a baking sheet or pan, line it with waxed paper. Cut the fudge into squares with cutter.
4. Then dip the pieces in melted chocolate and then place them on lined sheet or pan. Keep the sheet in refrigerator to chill for about half an hour and then serve the strawberry fudge.
