Chocolate Raspberry Brownie Mousse Delight Recipe

Ingredients
Frozen raspberries, drained mashed (1/3c), eggs (3large), vanilla extract (1tsp), butter, softened (1/3c about 2/3 stick), granulated sugar (1c), salt (1/2tsp), baking powder (1/2tsp), all purpose flour (1 1/4c), cocoa dark chocolate Morsel, divided (1 2/3c).
Raspberry Mousse:- Frozen raspberries, drained, mashed (1/4c), drops of red good coloring (6 to 7 optional), vanilla extract (1/2tsp), powdered sugar (3/4c), whipping cream (1/3c), cream cheese, softened (1pkg. about 8 oz).

Method of preparation:-
chocolate-raspberry-brownie-mousse-delightFor Brownie:-   First heat the oven to 350 degrees F. Take a square baking pan of 9 inch, grease it. Take a microwave -safe bowl of small size. Add 1 cup of morsels in it and microwave it uncovered for about 45 seconds on high power. Stir it well. If necessary, microwave it for more 10 to 20 seconds by stirring until it gets smooth and then keep it to cool to room temperature. Take a small bowl; add flour, salt and baking powder in it. Take a mixing bowl of medium size, beat butter, granulated sugar and vanilla in it until the mixture becomes creamy. Add eggs in it and beat them until they get fluffy and then beat melted chocolate in it. . Mix the flour mixture in it until it gets blended. Add mashed raspberries in it and then spread the mixture into the greased baking pan. Place the pan in oven and bake it for 25 to 30 minutes at 350 degrees F until the tooth pick inserted in the center comes out clean. Place the pan in wire rack to cool.
For Raspberry Mousse:-  Take the rest of the mousse; chop it roughly into ¼ inch pieces. Take a mixing bowl of medium size, beat cream cheese, food coloring, vanilla extract and powdered sugar in it until it gets creamy. Add chopped chocolate morsels and mashed raspberries in it. Take a small mixing bowl, beat cream in it until stiff peaks form and then pour it into the raspberry cream cheese mixture and mix it until it gets blended. When it gets ready then spread it over the cooled brownie. Place it in the refrigerator for about 1 hour and then cut it into bars and serve it.
