Coconut Layer Cake Recipe
This cake is very yummy and coconut gives it a different taste and shape. The icing made at home is also incredible.
Ingredients:-
All-purpose flour (3 cups), Baking powder (4 1/2 teaspoons), Shortening (3/4 cup), Milk (2 cups), Eggs (3), Flaked coconut (1 cup), Corn syrup (1/3 cup), Cream of tartar (1/4 teaspoon), Almond extract (1 teaspoon), Vanilla extract (2 teaspoon), Salt (1 teaspoon), White sugar (2¼ cup), Water (2 tablespoons)
Method Of Preparation:-
First of all, lug your oven and preheat it to 350 degrees F and grease the two 9 inch round cake pans. Now separate the yolk and egg white of the eggs and beat them separately. Take a bowl and mix 1 ½ cup sugar, egg yolk and one egg white and beat them properly to combine them evenly. Now sift the baking powder, flour and ¾ tsp salt and mix coconut and add milk and almond extract alternatively to it. Pour the batter into the pans and bake it for 30 minutes. Let it cool down completely and do angel icing on it and sprinkle the coconut on it. Decorate it and serve. You can make any shape of the cake you like.
Angel Icing:-
To make it, take 2 egg whites, corn syrup water, ¾ cup sugar, ¼ tsp salt and cream of tartar in a double boiler over the boiling water. Beat it with the beater till the mixture form the stiff peak. Remove from heat and add your favorite flavor ( I prefer vanilla) and beat it until it thickens enough to spread on the cake.
