Cranberry Pound Cake Recipe

Ingredients
1. Fresh cranberries, coarsely chopped (2c)
2. flour (3c)
3. eggs (4)
4. sugar (2c)
5. margarine or butter (1c)
6. vanilla (2tsp)
7. baking powder (2tsp)
8. dash salt

For Glaze:-
1. Cream (to thin)
2. powder sugar (2c)
3. vanilla (1tsp)

Method of preparation:-
1. Take cranberries, chop them and then sprinkle the flour over them to coat. Take a bowl, beat butter in it until it gets creamy. Slowly add sugar and vanilla in it and beat this mixture until it becomes fluffy. Beat eggs in it one by one.

2. Take another bowl, sieve flour and baking powder in it and then add this mixture to the creamed mixture. Beat both the mixtures and then mix chopped cranberries in it.

3. Take a Bundt pan, grease and flour it. Pour the mixture into the pan and then place the pan in oven. Bake it in oven for about 70 minutes at 325 degrees F. Bake the cake until the tooth pick inserted in the center comes out clean. Take out the pan from oven and keep it to cool for about 15 minutes.

4. Take a plate remove the cake on it. Take a bowl, add 2 cups powder sugar, 1 teaspoon of vanilla and cream in it. Mix them properly and then spread the glaze over the warm cake. Place it for overnight to set and for best flavor.
