Coconut Ice Cream Recipe

Ingredients:-
1. Egg yolks (6 large)
2. Heavy cream (2 C.)
3. Cream of coconut (1; 15 oz. can)
4. Vanilla extract (2 t.)
5. Pinch of salt
Method Of Preparation:-
1. Beat the egg yolks till they form a thick ribbon and are pale yellow in color. Now stir cream (1 cup) into the eggs slowly and gradually. Cook custard in a pan for 2-4 min or till it coats the back of the spoon.
2. Cool cream mixture and add salt, cream of coconut and vanilla. Refrigerate and chill for 4 hrs. Put the chilled custard into the freezer container or ice cream mould and freeze according to the directions given by the manufacturer.
