Berry Sabayon Gratinee Recipe

Sabayon:-
1. Vanilla Bean (1)
2. sugar (3/4c)
3. egg yolks (8)
4. powdered sugar (for dusting)
5. fresh raspberries, blueberries, blackberries or sliced strawberries (3 1/2c)
6. salt (1 pinch)
7. Moscato d’Asti or other sparkling wine (1c)
Method of preparation:-
1. Take a large bowl, beat egg yolks and sugar in it. Take vanilla bean, split it in half lengthwise and then rub the seeds with the back side of the pairing knife. Then add the vanilla bean to the egg yolk mixture and mix it properly.
2. Add wine in it a little at a time and mix it every time and then mix a pinch of salt in it. Now set the bowl over a pan of simmering water and beat it regularly for about 10 minutes until the sauce becomes thick and fluffy. Heat the broiler.
3. Take 6 oven proof bowls or gratin dishes; place ½ cups of berries in the bottom of the dishes. Spread equal amount of sabayon over each dish. Then dust the rest of the berries over dishes.
4. Place the dishes on a sheet pan and then place the pan under the broiler on the top shelf of oven. Then broil it for about 1 to 2 minutes until the sabayon gets golden brown in color. Dust the powdered sugar to top and then serve it immediately.
