Charlotte With Mandarin Oranges (Charlotte Aux Oranges) Recipe

Ingredients
1. Mandarin oranges (2cans)
2. rum or sherry (4tbsp)
3. ground almonds (3 oz)
4. juice of (1lemon)
5. juice of (1 orange)
6. egg yolk (1)
7. corn flour (1tbsp)
8. sponge fingers (25)
9. walnuts (for decoration)
10. orange marmalade (as desired)

Method of preparation:-
1. Take two bowls; drain the oranges of cans in these bowls. Take 5 sponge fingers, crumble them.

2. Take a saucepan, mix corn flour and egg in it and then add lemon and orange juice in it. Beat this mixture and then cook it over low heat until the mixture becomes thicken. Then add 1 bowl of oranges, ground almonds and biscuit crumbs in it. Mix it properly.

3. Take a small bowl, put rest of the biscuits in it and then sprinkle the rum or sherry over the biscuits. Line the charlotte mould with this mixture. Spread a little marmalade over the biscuits and then spread the layer of half of the orange cream.

4. Again spread the thin layer of marmalade and then the rest of the orange cream. Spread the rest of the biscuits on the top. Now place it in the refrigerator to chill and then decorate it with rest of the oranges and walnuts. Keep it to chill at least 6 hours and then serve it.
