Cococnut Rock Bun Recipe

Coconut powder (200gms), caster sugar (200gms about 7 oz), eggs whites (3), apricot jam (20gms about 2/3 oz or 1 large spoonful).
Method of preparation:-
First heat the oven to 356 degrees F or 180 degrees C. Take a salad bowl, put egg whites and sugar in it. Mix it well and then place the bowl on a casserole pan half full of boiling water on the hob to make a bain marie. Heat and stir the mixture until it becomes very hot to touch. Now take out the bowl from the bain marie and add coconut powder in it and then add apricot jam in it. Stir the mixture regularly for about 2 to 3 minutes. Then make small balls of this mixture and place them on non stick oven plate with spoon or pastry bag. Then cook them at 356 degrees F for about 20 minutes. When the coconut rock buns get ready then take them out from oven and keep them to cool and then serve them.
Makes about 20 coconut rock buns
