Exotic Fruit Flan Recipe

1. Peeled and diced kiwi (1/2c)
2. pitted cherries (1/2c)
3. diced fresh pineapple or canned (1/2c)
4. eggs (6)
5. granulated sugar (6tbsp)
6. lemon (1)
7. salt (a pinch)
8. water (3 tbsp)
Method of preparation:-
1. First heat the oven to 425 degrees F. Squeeze the lemon in a small bowl and take out the seeds from it.
2. Take a pot, place it over low heat, add 3 tablespoon of water, lemon juice, fruits and sugar in it. Cook the mixture for about 10 minutes. If the water dries up then add a little bit. Take off the pot from heat and keep it to cool.
3. Take a bowl, beat eggs in it and add a pinch of salt in it. Then add the fruits in it and mix it gently. Take pie dish or flan dish, pour the mixture into the dish and then bake it in double boiler or bain marie for an hour or until the flan becomes firm or rigid.
4. Take it out from oven and keep it to cool. Then place it in the refrigerator for about 2 hours or more. Now the fruit flan is ready to serve.
