Grapefruit Snow Recipe

1. Grapefruit (2)
2. grated rind of (1lemon)
3. cream (3tbsp)
4. eggs (4)
5. caster sugar (100gms)
Method of preparation:-
1. Take grapefruit, cut it into halves. Remove the flesh with cutting through the skin. Place the skin of the grapefruit in the refrigerator. Keep the flesh for a while to liquidize and then strain off the juice from it and then throw out the pulp.
2. Take a saucepan, mix the juice of grapefruit with sugar, cream, egg yolks and grated lemon rind. Cook this mixture gently either in bain-marie or over low heat by stirring regularly until the mixture coats the back of the spoon.
3. Then keep it to cool and then add the mixture in the stiffly beaten egg whites. Fill this mixture in the grapefruit skins. Place it in the refrigerator until serving. Serve it when it gets very cold but not frozen hard.
