Banana Split Crepes Recipe

Peeled and sliced bananas (3), fresh pineapple chunks (1c), fresh strawberries, divided (2c), crepes (6 to 8 about 6-inch), whipping topping (1c), zest of one fresh lemon, freshly grated ginger (2tsp), juice of one fresh lemon, strawberry topping (below), whipped topping and fresh mint (for garnish).
Method of preparation:-
Take strawberries, wash and remove the stem of strawberries. Take a large bowl, slice I cup of strawberries in it. Add lemon zest, ginger, banana and pineapple chunks in it and then mix them gently. Then add whipped topping into he fruit mixture. Take 6 to 8 crepes, put the fruit mixture in these crepes, spooning down the center of crepes and then roll them. Take separate serving plates or a large platter; place the rolls in it with seam side down. Sprinkle the strawberry topping over it and add a spoonful of whipped topping. Decorate it with fresh mint and then serve it at once.
For strawberry topping:- Take a food processor, put 1 cup of strawberries in it and add the juice of fresh lemon in it. Cover the processor and blend the strawberries to make the puree of them.
