For Crust:-
1. Flour (1 1/4c)
2. walnut pieces, divided (1c)
3. flaked coconut (1/2c)
4. butter-flavor shortening (1/2c)
5. firmly packed brown sugar (1/2c)
For Filling:-
1. Cherry pie filling (1can about 21 oz)
2. vanilla (2tsp)
3. eggs (2)
4. granulated sugar (2/3c)
5. cream cheese, softened (2 pkg. about 8 oz)
Method of preparation:-
1. First heat the oven to 350 degrees F. Take a pan of 13*9 inch, grease it with butter flavor shortening. Keep the pan aside.
2. Take nuts, coarsely chop the ½ of the nuts and finely chop the rest of the nuts and then keep them aside. Take a bowl, mix flour and brown sugar in it and then mix the shortening in it until the mixture becomes crumbly.
3. Then add coconut and ½ cup of finely chopped nuts in it. Mix it well and keep aside the half of this mixture. Place the rest of the mixture in the bottom of the pan. Now place the pan in oven and bake it for about 12 to 15 minutes until the edges changes to light brown in color.
4. To prepare filling, take a bowl, mix cream cheese and sugar in it, beat eggs in it one by one and then add vanilla in it. Then pour this mixture over the crust.
5. Mix the coarsely chopped nuts in ½ cup of crust mixture. Dust this mixture over the cheese layer. Again bake it for about 20 to 25 minutes until it gets firm. Take it out from oven and cool it and the place cherry pie filling on top of it and place it in refrigerator to chill.
