Fresh Peach Kuchen Recipe

Ingredients
Frozen sliced peaches (2 1/2pkg, about 10 oz), peeled and sliced ripe peaches (6 about 2lb), boiling water, lemon juice (2tbsp).
Kuchen Batter:-   Eggs (2), salt (1/2tsp), baking powder (2tsp), sugar (1/2c), sifted all purpose flour (1 1/2c), butter or regular margarine, melted (1/4c), grated lemon peel (1 1/2tbsp), milk (2tbsp).
For Topping:-    Heavy cream (3tbsp), egg yolk (1), ground cinnamon (1/2tsp), sugar (1/4c), soft vanilla ice cream or sweetened whipped cream.

Method of preparation:-
fresh-peach-kuchenTake a large bowl, put peaches in it and then pour the boiling water over peaches. Keep it for 1 minute until the skin of peaches get loosen, then drain them and put them in cold water for seconds to prevent the softening of fruit. Pare the peaches with paring knife and place them in a large bowl. Heat the oven to 400 degrees F. Dust the lemon juice over the peaches to prevent the darkening and mix them to coat with lemon juice and the bowl aside. Take a sheet of waxed paper, sieve flour, salt, baking powder and sugar on it. Take a large mixing bowl, beat milk, eggs, lemon peel in it with fork. Mix the flour mixture with melted butter with fork for 1 minute until it becomes smooth. Take a spring form pan or round layer cake pan of 9 inch, butter it. Spread the batter into the pan. Keep the kuchen in the refrigerator for about ½ hour before baking. Mix sugar and cinnamon. Now drain the peach slices and place them on batter, place 5 peach slices in the center. Dust the sugar-cinnamon over the peaches. Now bake them for about 25 minutes at 400 degrees F. then take out the kuchen from oven. Take a bowl, beat egg yolk with cream in it with a fork. Pour it over the peaches. Again bake it for about 10 minutes. Then place it on wire rack to cool and remove the spring form pan. Cut the kuchen in wedges and serve with soft vanilla ice cream or sweetened whipped cream.
