Honeyed Fruit With Gingered Wisconsin Mascarpone Recipe

1. Mixed seasonal fruits, any variety except bananas (6c)
2. orange liqueur or cream sherry (1/4c)
3. honey (1/4c)
4. white grape fruit juice (1c)
5. Wisconsin Mascarpone cheese (3/4c about 3 ounces)
6. milk (optional)
7. crystallized ginger, finally chopped (1tbsp)
8. orange liqueur or cream sherry (1tbsp)
9. honey (2tbsp)
Method of preparation:-
1. Take a small saucepan, mix ¼ cup of honey and grape juice in it. Keep it to boil and then turn down the heat to low and keep it to simmer uncovered for about 5 minutes. Then mix ¼ cup of orange liqueur or sherry in it.
2. Take a large bowl, place the fruits in it and then pour the warm honey mixture over the fruit. Cover the bowl and place it in the refrigerator for about 2 to 4 hours to chill by stirring it irregularly.
3. Take a small bowl, add mascarpone cheese, 1 tablespoon of liqueur or sherry, 2 tablespoon of honey and crystallized ginger in it. Cover it and place it in refrigerator to chill until to serve.
4. Now take dessert dishes, place the fruit with spoon on dishes. Mix a little milk into the mascarpone cheese mixture to make it smooth and then pour it over the fruit in dessert dishes. Decorate it with crystallized ginger and serve it.
