Nectarine and Blueberry Cobbler Recipe

Ingredients

Fruit Filling:-
1. Blueberries (1pint)
2. firm but ripe nectarines, pitted and cut into 1/2 inch wedges (8med.)
3. cornstarch (1tsp)
4. sugar (1/2c)
5. fresh lemon juice (1tbsp)
6. water (1/2c)

Biscuits:-
1. Heavy whipping cream (1c)
2. sugar (4tbsp)
3. salt (1/4tsp)
4. baking powder (1tbsp)
5. all purpose flour (1 3/4c)
6. vanilla ice cream (optional)

Method of preparation:-
1. For Filling; take a saucepan of 4 quart, add blueberries, cornstarch, ½ cup of water, lemon juice, sugar and nectarines in it. Mix all these ingredients and keep this mixture to boil by stirring regularly over medium high heat.

2. Then turn down the heat to low and keep it to simmer for about 2 minutes until the fruits get soften. Take off the pan from heat.

3. For Biscuits; first heat the oven to 450 degrees F. Take a large bowl, mix flour, 3 tablespoon of sugar, salt, baking powder in it.

4. Reserve 1 tablespoon of cream, beat the rest of the cream in a bowl of mixer at medium speed until the stiff peaks get form. Add whipped cream into the flour mixture and stir it with rubber spatula until soft dough forms. Then knead the dough 3 to 4 times with lightly floured hands.

5. Place the dough on lightly floured surface and roll into ¾ inch thickness and then with round biscuit cutter cut as many biscuits as possible. Again heat the filling over medium heat.

6. Take a glass baking dish or shallow casserole of 2 ½ quart. Then pour the filling mixture in it and place the biscuits on the top of fruit mixture, brush the biscuits with reserved cream and dust the rest of 1 tablespoon of sugar over it.

7. Place the dish in oven and bake the cobbler at 450 degrees F for about 15 to 17 minutes until the fruits mixture gets bubbly and biscuits get brown. Then place the cobbler on wire rack for about 30 minutes to cool. Serve it with ice cream.
