Pineapple and Banana Couscous Pudding Recipe

1. Banana, chopped (1/2large)
2. unsalted butter (1tbsp)
3. plain couscous (1/2c)
4. water (3/4c)
5. peeled and diced fresh pineapples (1 1/2c)
6. candied pineapple minced (1/2c)
7. triple sec (1tbsp)
8. sweetened cream of coconut (5tbsp)
9. chilled whipping cream (1 1/2c+2tbsp)
10. packed golden brown sugar (1tbsp)
Method of preparation:-
1. Take a heavy medium size saucepan, add ¾ cup of water in it,. Keep it to boil over high heat. Mix couscous in it and then take off the pan from heat. Cover the pan and keep it for about 15 minutes until the water gets absorbed.
2. Take a small non stick frying pan, place it over medium high heat. Melt butter in it and then add banana and sugar in it. Sauté them for about 1 minute until the banana gets soft. Take off the pan from heat and keep it to cool.
3. Take a large bowl, beat cream in it with an electric mixer until soft peaks get form. Mix it in cream of coconut and triple sec. Keep aside the 6 tablespoon of whipped cream mixture for topping. Mix couscous and banana and the candied pineapple in the rest of the whipped cream.
4. Take 6 dessert bowls; divide the mixture among these bowls. Spread the whipped cream mixture on top of each pudding. Place fresh pineapples over top and then serve it.
