Pineapple Sour Cream Pie Recipe

1. All purpose flour (1/4c)
2. white sugar (3/4c)
3. eggs (3)
4. lemon juice (1tbsp)
5. sour cream (1c)
6. crushed pineapple, drained (1 can about 15 ounce)
7. salt (1/2tsp)
8. graham wafer crust (1 about 9 inch)
9. white sugar (1/3c)
10. cream of tartar (1/4tsp)
11. vanilla extract (1/2tsp)
Method of preparation:-
1. First heat the oven to 350 degrees F or 175 degrees C. Separate the eggs in bowls. Take a saucepan, place it over medium heat. Add flour, crushed pineapple, salt, white sugar, lemon juice and sour cream in it. Cook this mixture until it gets bubbly and becomes thick.
2. Take a small amount of cooked mixture, mix it into the beaten egg yolks and then mix egg yolk into the cooked mixture. Cook it for about 2 to 3 minutes by stirring regularly. Then take off the pan from heat and keep it to cool.
3. Now take the bowl of egg whites, beat egg whites, cream of tartar and vanilla in it until hard peaks form. Slowly mix 1/3 cup of sugar in it and beat it again until it becomes hard and shiny.
4. Take cooled filling mixture, fill it in the graham wafer crust and top it with meringue. Place the crust in oven and bake it for about 12 minutes at 350 degrees F. Bake it until it get changes to golden color. Take out the pie from oven and keep it to cool and then serve it.
