German Pfeffernusse Recipe

1. Dark corn syrup (1c)
2. sugar (1c)
3. butter or margarine, softened (3/4c)
4. baking soda (1tsp)
5. pepper (1tsp)
6. anise seeds (2tsp)
7. hot water (3tbsp)
8. sifted powdered sugar
9. all purpose flour, divided (4 to 4 ½ c)
10. salt (1/4tsp)
11. ground cloves (1/4tsp)
12. ground cardamom (1/4tsp)
13. ground allspice (1/4tsp)
Method of preparation:-
1. Take a bowl, cream butter in it with an electric mixer at medium speed. Then add sugar in it and beat it well. Add corn syrup, hot water, salt, ground cloves, ground cardamom, allspice, soda, pepper, anise seeds in it.
2. Beat all these ingredients at low speed until they get well blended. Then slowly add 4 cups of flour to the butter mixture, beat the mixture at low speed until it gets blended. Then add rest of flour in it to form stiff dough.
3. Cover the dough and keep it for about 3 to 4 hours to chill. Then make 8 portions of dough and then roll each into ropes of ½ to 3/4 –inch thick.
4. Take ungreased baking sheets, cut the ropes into 1-inch length and place on sheets at 2-inches distance. Place the sheets in oven and bake them for 10 to 15 minutes at 350 degrees F until the color changes to golden brown. Place them on wire rack to cool and then roll in powdered sugar.
Makes about 13 dozens pfeffernusse
