Firikia Glyko: Whole Apples In Light Syrup Recipe

1. Peeled small sweet apples preferably firikia (5 ½ pounds)
2. juice of large lemon (about 3 to 4tbsp)
3. brandy (1/2c)
4. whole cloves (2 for each apple)
5. cinnamon (2sticks)
6. water (10 1/2c)
7. sugar (11c)
Method Of Preparation:-
1. Take apples, peeled them and place one clove in the top and bottom of each apple.
2. Take a large pot, place all the ingredients in it except brandy and lemon juice. Keep them to boil by stirring irregularly with wooden spoon. When the mixture gets fully boiled then turns down the heat to low and boil it lightly without covering the pan. Cook it for 1 hour 15 minutes.
3. Mix brandy and lemon juice and pour it into the pan five minutes before the cooking ends. Keep the apples to cool completely in the pot and the take out the apples carefully with slotted spoon.
4. Now serve one apple per person with syrup. Store apples in clean jars and divide syrup lightly. Seal the jars when apples gets cooled completely.
