Honey Pie From Sifnos Recipe

Ingredients
1. All purpose flour (1 3/4c)
2. cold water (1/4c)
3. butter, cut into small pieces (1/2c)
4. white sugar (2tsp)
5. all purpose flour (1tbsp)
6. white sugar (1/4c)
7. eggs (4)
8. ricotta cheese (1 container about 16 ounce)
9. thyme honey (1/4c)
10. ground cinnamon, divided (1/2tsp)

Method Of Preparation:-
1. Take a large bowl, add 2 tablespoon of sugar and 1 ¾ cups of flour in it. Cut in butter until the mixture becomes crumbly. Mix about 1 tablespoon of water at a time in it to form dough.

2. Make a ball of dough and wrap it in a plastic sheet and then keep it in the refrigerator for about 30 minutes. Now heat the oven to 350 degrees F or 175 degrees C.

3. Take a pie pan of 10-inch. Roll dough in lightly floured surface and spread it in pan and then trim the excess from the edges of the pan. Use fork to pierce the bottom of dough and then keep aside the bowl.

4. Take a large bowl, beat eggs in it until soft peaks get form. Slowly beat 1 tablespoon of flour, ¼ cup of sugar and half of the cinnamon in it. Keep on beating this mixture until hard peaks get form.

5. Beat honey in it and then add ricotta cheese in it and mix it well. Now pour this mixture into the pie shell and make it smooth with moistened knife.

6. Place the pie shell in oven and bake it for about 50 to 60 minutes at 350 degrees F until the center of the pie gets set and the color changes to golden brown. Take out the pie from oven and dust the rest of the cinnamon over it.
