Karpouzosoupa: Chilled Watermelon Soup Recipe

Golden raisins (1 handful), fresh fruit, cut in small cubes like peaches, nectarines, apricots, grapes, melons, cherries etc. (2 pounds), seeded watermelon chunks (8-10 cups), fresh spearmint or other mint (3-4 leaves), Greek thyme honey (3 tbsp) and Mavrodaphne wine or other sweet dessert wine like sweet samos muscat (4 ounces).
For Garnish:- Fresh double mint, spearmint or other mint leaves.
Method Of Preparation:-
Take watermelon, remove its rind and the seeds and then cut it into chunks. Take a bowl of food processor or a blender, add watermelon chunks in it. Then make the puree of watermelon with wine and honey until it becomes liquefied. Take a large serving bowl; put the soup in it and mix fruit and mint in it. Cover the bowl and keep it in the refrigerator for at least 4 hours. Serve watermelon soup as a light and refreshing meal in tall glasses or in glass bowls and decorate it with mint leaves.
