Pantespani: Greek Sponge Cake Recipe

For cake:-
1. Self rising flour (2c)
2. corn starch (3tbsp)
3. salt (1 pinch)
4. granulated sugar (2c)
5. eggs, separated (6)
6. water (2/3c)
7. grated orange peel (3tbsp)
For syrup:-
1. Cinnamon (1stick)
2. whole cloves (3to4)
3. granulated sugar (1c)
4. water (3c)
5. juice of (1orange)
6. brandy (2tbsp)
For Baking Pan:-
1. Flour and margarine or coking spray
Method of preparation:-
1. Take a saucepan, add cinnamon stick, cloves, granulated sugar and water in it. Mix all these ingredients and keep this mixture to boil for about 7 to 8 minutes and then mix brandy and orange juice in it.
2. Take off the pan from heat and keep it to cool. Now heat the oven to 340 degrees F or 170 degrees C. Take a bowl, beat egg whites, salt and ½ cup of sugar in it until the stiff peaks get form.
3. Take another bowl, beat egg yolks and the rest of 1 1/2 cups of sugar in it and then slowly mix all the remaining ingredients in it. Beat this mixture for about 3 to 4 minutes until all the ingredients get mixed well.
4. Then mix egg whites mixture in it and mix it until it gets well blended. Take a pan, lightly grease the bottom and the sides of the pan with margarine and then sprinkle flour on it.
5. Place the batter into the pan. Place the pan in oven and bake it at 340 degrees F for about 55to 60 minutes until the needle inserted in the center of cake comes out clean. The top of the cake changes to dark golden color. Then take out the cake from the oven and cut it into squares or diamonds.
6. Take out cinnamon stick and cloves from the cake and then pour the cooled syrup over the top of the cake. Keep it aside until the syrup gets absorb. Now the cake is ready to serve.
