All purpose flour (1 1/2c), black raisins or currants (1/2c+1tbsp), sugar (3/4c), baking powder (4tsp), vanilla extract (3/4tsp), salt (1/2tsp), water (1 1/2c), confectioner sugar and oil for frying.
Method Of Preparation:-
Take a mixing bowl, sieve flour, salt and baking powder in it. Then add water, sugar, raisins and vanilla in it. Mix all these ingredients until get well blended. Cover the bowl and keep it aside for about 1 hour. Take a pan, heat oil in it over medium heat and then drop a tablespoonful of batter into the hot oil and then fry them until they get brown from both sides. Then drain the pan cakes on absorbent paper towels. Dust confectioner sugar over the pancakes and decorate them with your favorite fruits. Now the pancakes are ready to serve.
Makes about 3 dozen to small pancakes
