Vassilopita: Greek New Year Cake Recipe

Ingredients
1. Self rising flour (4c)
2. grated peel of (2oranges)
3. brandy (4tbsp)
4. eggs (6)
5. sugar (1 1/2c)
6. butter (3/4c)
7. 1 coin wrapped in foil
8. evaporated milk (3/4c)
9. marmalade (optional)
10. grated coconut (optional)
11. confectioner sugar (optional)

Method Of Preparation:-
1. First heat the oven to 390 degrees F or 200 degrees C. Keep all the ingredients to room temperature. Take a mixing bowl, cream the butter in it, slowly beat sugar in it, then beat eggs one at a time and then add brandy in it.

2. Beat the mixture properly and then dust the grated orange peel over the batter. Add milk and flour, a small amount at a time in it. Take a round tapsi of 12 to 13-inch diameter (baking pan with 2 to 3-inch sides). Flour the pan and pour the batter in it.

3. Place it in oven and bake it for about 45 minutes. When the batter begins to set then insert coin anywhere except the exact center of the dough. Continue baking the cake.

4. Take out the cake from oven and keep it to cool for about 5 minutes. Place a large plate over the top of tapsi or baking pan and then invert it so that the cake comes out on the plate.

5. Now take a serving plate, put it over the cake and then invert it to get the right side of the cake. Now keep it to cool for about 4 hours.

6. For Topping or Decoration; Cover the cake with sifted confectioner sugar, coat it lightly with marmalade and then dust grated coconut over it.
