Karanji (Gujiya) Recipe

karanji gujiyaThis recipe is one of the favorite and special recipe which Indians make it on Diwali and Holi.

Ingredients:
Milk (1½ cups), Wheat flour (1 cup), Ghee (3 tbsp), Poppy seeds (1 tbsp), Grated coconut (1 cup), Cardamom powder (½ tsp), Few Almonds, Few Raisins, Salt (1 pinch), Sugar (3¼ cups), Oil (for frying)

Method Of Preparation:-
Take a bowl and mix salt, ghee and flour in it. Gradually add water and form a dough. Cover it with the wet cloth and set aside. Now for the stuffing, cook sugar, almonds, raisins, coconut, cardamom, poppy seeds and milk till the milk evaporates. Divide the dough into 20- 25 sections and roll them into a flat round pancakes. Fill in the stuffing and fold them. Now fry them in a hot oil in a pan till golden brown. Rub of excess oil on paper towel and let them cool. Store in air tight container.

Badam Kheer Recipe

badam kheerThis almond (Badam) kheer takes no time in preparation and it contains milk, sugar and almonds, so tasty as well as healthy.

Ingredients:
Almond (Badam) (1/2 cup), Cardamoms (5 crushed), Milk (2 cups), Sugar (3 tbsp), A pinch of Saffron (Kesar) - soaked in lukewarm milk

Method Of Preparation:-
Take a half liter of water in a pan and bring it to boil. Now add the almonds in the boiling water and cook it for around 2 minutes. Remove from heat and drain the water. Make a paste of almonds and be sure to remove the skin of the almonds. Now boil the milk and add almond paste and sugar in the boiling milk and cook it for 5 minutes with continuous stirring on a low flame. Remove from the flame and add saffron and cardamom. Refrigerate it and serve it chill.

Badam Phirni Recipe

Ingredients:
Blanched almonds (sliced) (1/4th cup), Milk (2 cups), Rice (2 tbsp), Kewra essence (1/2 tsp), Green cardamom (crushed) (1 tsp), Sugar (3 tbsp), Silver or gold foil paper (varak)

Method Of Preparation:-
Take the rice and soak it in the water for few hours. Now drain the water and grind the rice in the mixer to make a smooth paste. Take a nonstick pan and add milk. Now on a low heat add sugar, rice, cardamom in it and stir continuously till the milk becomes thick. Now remove it from the heat and add almonds (Badam). Keep it in refrigerator and serve chill. You can also garnish it with gold or silver foil paper.

Ingredients:
All-purpose flour (1½ cups), Egg whites (2), Margarine softened (¼ cup), Nonfat buttermilk (½ cup), Vanilla extract (1 teaspoon), Unsweetened cocoa (½ cup), Baking soda (1 teaspoon), Sugar (2/3 cup), Salt (¼ teaspoon), Sifted powdered sugar (2 teaspoons), Vegetable cooking spray

Method Of Preparation:-
Firstly take margarine and cream it, after that add sugar (2/3 cup) and blend them well in a electric mixer to make a smooth paste. Now add vanilla, egg whites and buttermilk in it and blend it again. After that add cocoa, flour, salt and baking powder in it and mix well. Now drop the dough on the cookie sheet in the form of small balls, 2 inches apart. before that remember to spray the cooking oil on the baking dish. Bake them for 7 minutes at 350 degrees. Cool them and sprinkle the powdered sugar before serving if you desire. You can also put cream with sugar in the centre of the cookies. Its optional and up to you how imaginative you are.

Almond Cookies Recipe

Ingredients:
All-purpose flour (1 cup), Blanched almonds (1 cup), Egg whites (3), Rose water (1 tsp), Sugar (1 1/3 cups), Vegetable cooking spray

Method Of Preparation:-
Take almonds and grind them in the processor until they become a fine powder. Now add sugar and flour in it and blend them well. The third step is to add egg whites and rose water in the processor. Now blend them well to mix it properly until it becomes thick. Now shape he dough into balls around 28-30 balls and place them on the baking sheet around 2 inches apart. The cooking oil should be sprayed on the baking sheet before putting the cookies on it. Bake them for 28-30 minutes or until they become crisp from outer side and soft from inside in the oven at 325 degrees.

Suji Ka Halwa Recipe

suji ka halwaThis dish takes very little time for preparation.

Ingredients:-
Suji (1 cup), Sugar (1cup), Water (3 cups), Ghee (3 tbsp.), Dry fruits

Method Of Preparation:-
Take a pan and add Ghee in it. Just heat the ghee just for 40 seconds and add suji in it with continuous stirring. Cook till the Suji is light brown in color. Be sure that you stir continuously in the dish till it is fully cooked. When Suji is cooked add sugar with stirring and water. Now continuously stir the water until the content thickens. Remove it from the heat and sprinkle dry fruit of your choice on it.
