Bizcochos Borrachos (Drunken Sponge Cakes) Recipe

1. Flour (3/4c)
2. granulated sugar (1/2c)
3. eggs (4)
4. ground cinnamon (1tsp for decoration)
5. baking powder (1tsp)
For Sauce:-
1. Brandy or rum (1 ½ oz)
2. honey (1.5tbsp)
3. water (8oz)
4. granulated sugar (1/3c)
5. peel from (1/2 lemon)
6. cinnamon stick (1)
Method Of Preparation:-
1. First heat the oven to 350 degrees F or 180 degrees C. Take a square pan of 8-inches, grease it and flour it. Break eggs, separate the egg yolks from whites.
2. Take a bowl, add egg yolks and sugar in it. Beat this mixture until it becomes creamy. Beat egg whites in another bowl until stiff peaks get form. Then add it smoothly into the egg yolk mixture. Add flour, and baking powder in it a bit at a time and mix it well. Now pour the batter into the baking pan.
3. Place the pan in oven and bake it at 350 degrees for about 20 minutes until it changes to golden color. Meanwhile prepare syrup, take a small pan, add water, sugar, honey, cinnamon and lemon peel in it. Keep it to boil by stirring irregularly.
4. Then take off the pan from heat and add brandy in it and then keep it to cool. When the cake gets cooled then cut it into pieces and places them on the serving plate. Sprinkle the brandy sauce over the cake pieces and then dust cinnamon on the top. Serve the cake with tea or coffee.
Makes about 9 small cakes
