Bunuelos De Viento (Light As Air Spanish Fritters) Recipe

Ingredients
Unbleached white flour (4.5 oz), granulated sugar (2tbsp), salt (a pinch), zest of (1lemon), butter (2tbsp), water (1 1/4c), baking powder (1/4tsp), vegetable oil for frying (3 to 4 c), eggs (4) and egg custard (for filling optional).

Method Of Preparation:-
Bunuelos de Viento Recipe – Light-as-Air Spanish FrittersTake a small saucepan, place it over heat. Pour water, lemon zest, butter, salt and granulated sugar in it. Keep it to boil. As it starts boiling then add flour and baking powder in it and stir it regularly with wooden spoon until the dough begins to come out from the sides of the pan. Now take off the pan from heat and keep it to cool for about few minutes. Then mix eggs in it one by one with hand mix until the dough becomes smooth. Keep it aside for about 2 hours. Take a heavy bottomed frying pan, heat oil in it on medium high heat. When the oil gets hot then put a spoonful of dough in it and fries it until gets golden color and starts to float in oil. Take it out from the pan with slotted spoon and drain it on paper towel. Make more bunuelos in the same way. Dust powdered sugar over the bunuelos and then serve them at once.

Makes about 24 bunuelos
