Magdalenas (Spanish Cakes) Recipe

1. Unbleached white flour (1 2/3c)
2. unsalted butter (1 stick about 4 oz)
3. granulated sugar (1c)
4. eggs (4)
5. milk (1tbsp)
6. zest from 1 lemon
7. baking powder (1tbsp)
Method Of Preparation:-
1. First heat the oven to 375 degrees F. Measure ¼ cup of sugar, put it in a bowl and keep it aside. Take a mixing bowl of medium size, add eggs and ¾ cup of sugar in it and then beat it until the mixture becomes light.
2. Take a small saucepan, add butter in it and melt it in the microwave. Then gently pour the melted butter into the egg mixture and mix it properly. Mix milk and lemon zest in it.
3. Now measure flour and put it in a small bowl. Then add the baking powder in it and mix it. While beating the egg mixture, add the flour mixture in it. Keep on stirring until all the ingredients get mixed to make thick batter.
4. Take a cupcake pan, place paper liner in it. Place the batter into the pan with spoon filling each one half . When it gets baked it gets double size. Sprinkle the reserved sugar on each Magdalena.
5. Now place the pan on the center shelf of the oven and bake it at 375 degrees F for about 18 to 20 minutes until the cakes turn to golden color.
6. Take off the pan from oven and keep it to cool for about 5 minutes and then take it out from pan to cool completely. Now the cupcakes are ready to serve.
