Mahon Cheese Ice Cream Recipe

Spanish Mahon or Danish Fontana cheese (4 ounce), rind discarded and cheese coarsely grated (1c), cream cheese, softened (4 ounce), sugar (1/2c), eggs (3large), whole milk (3c), vanilla (1/2tsp).
Method Of Preparation:-
Take a heavy saucepan of 2 quart, boil milk in it. Take a bowl, beat sugar, eggs and a pinch of salt in it and then add hot milk in it and mix it. Pour the mixture back into the saucepan and keep it to cook by stirring it with wooden spoon on low heat for about 2 to 3 minutes or until it registers 170 to 175 degrees F on thermometer. Then pour the custard through a mesh sieve into a clean bowl. Then add vanilla and cheese in it and stir the mixture until the cheese get mixed properly. Cover the custard with wax paper and keep it to chill for about 4 hours. Place it in ice cream maker and then freeze it. Then place the ice cream in air tight container and put it in the freezer for at least 2 hours until it becomes hard. Keep it for about 20 minutes at room temperature before serving.
Makes about 1 quart
