These pancakes are the real Spanish desserts and contain Spanish brandy, oranges, eggs, butter, milk and flour etc.
1. Cognac – Spanish brandy (5 tbsp)
2. Milk (1/2 L)
3. Flour (125g)
4. Eggs (5)
5. Grated rind of 2 oranges
6. Juice of 1 orange
7. Butter (100g)
8. Sugar (75g)
9. salt (a pinch)
Method Of Preparation:-
1. Add milk, sugar (25 g), eggs and pinch of salt in the sifted flour. Mix then well and add melted butter (50 g) and beat all the ingredients to make a smooth batter.
2. In the mean time, heat up the frying pan and apply little butter in it. Then pour around 2 tbsp of the batter in the pan. Cook it from both sides till they are browned and set aside. Repeat it with whole batter.
3. Now for the sauce melt rest of the sugar and butter in the pan and add orange rind and caramelize it. Then add brandy and heat it to reduce little bit. Dip pancakes in the sauce and serve immediately. You can also pour excess of the sauce at the edges.
