Peaches In Wine (Melocotones En Vino) Recipe

1. Red wine (3c)
2. ripe, firm peaches (4large)
3. cinnamon stick (1)
4. brandy (4tbsp)
5. sugar (6tbsp)
Method Of Preparation:-
1. Take peaches, peel them and keep them aside. Take a bowl or a saucepan; pour brandy, sugar and wine in it. Mix it until the sugar gets completely dissolved.
2. Set the peaches in the pan in this way that the peaches stay in place rather than bobbling around as the liquid gets boil. Then pour the wine mixture in it.
3. Add enough water to cover the peaches and cinnamon stick in it. Keep the wine to boil, then turn down the heat to low and keep it to simmer for about 20 to 30 minutes until the peaches get cooked. The peaches should not be mushy but softer. Take off the pan from heat and cool it to room temperature.
4. Take out the peaches from the pan and place them in a glass container or bowl and cover it. Take out the cinnamon stick and place the pan again on heat and boil it. Boil it to reduce the liquid.
5. Then take off the pan from heat and keep it to cool to room temperature. Pour the cooled liquid over the peaches and then serve or store the peaches. Serve them with sauce hot or cold or serve it with a scoop of vanilla ice-cream.
