Spanish Sesame Rings Recipe

Ingredients
1. All purpose flour (4c+2tbsp)
2. whole eggs, at room temperature (3large)
3. vegetable oil (1/2c)
4. egg yolks, at room temperature (2large)
5. fine salt (1/2tsp)
6. pure vanilla extract (1tbsp)
7. tahini or sesame paste (1/4c)
8. sugar (1 1/4c)
9. baking powder (1tbsp)

For Sesame Glaze:-
1. Honey (1tsp)
2. lightly beaten egg whites (1large)
3. hulled raw sesame seeds (1/2c)

Method Of Preparation:-
1. First heat the oven to 375 degrees f. Take 2 baking sheets, line them with parchment paper or coat with non grease cooking spray. Take a bowl of medium size, mix flour, salt and baking powder in it.

2. Take a separate large bowl, beat egg yolks and and eggs with sugar in it with an electric mixer. Beat it for about 2 minutes until the mixture becomes light and fluffy and then beat vanilla, oil and tahini in it.

3. Add the flour mixture in it and mix both the mixtures to make dough. Cover the bowl of dough and keep it for about 5 minutes before making rings.

4. Take some dough and roll it into a rope about 5-inch long and 3/8-inch thick. Press the ends of the rope together to make a ring. Make more rings in the same way.

5. To Glaze The Cookies; take a small plate, put sesame seeds on it. Take a small bowl, beat egg yolks and honey in it and then apply it on each ring. Then dip the ring into the sesame seeds.

6. Place the cookies on greased baking dish with seeds upside at least 1-inch apart. Place the dish in oven and bake it at 375 degrees F for about 15 to 20 minutes until the cookies changes to light brown color.
Then take out the sheet from oven and place it on wire rack to cool the cookies. When the cookies get cool then serve them or store them.

Makes about 40 cookies
